Parmesan Orzo

Tired of macaroni and cheese? Tired of garlic bread? Tired of mashed potatoes? No? Yah, me either. BUT! In the world of starchy side dishes, the more really is the merrier. Am I right?

If you're wondering what orzo is and where to find it in a grocery store, orzo is a rice shaped pasta found on the (you guessed it) pasta aisle. It comes in a small box and costs about $1. If you're worried that your family will be weirded out about trying something new, simply do not tell them it's orzo. They'll assume it's rice, take a bite, and ask you what you did to make the night's rice taste so good. That's when you can tell them all about me and my awesome blog and how what they just ate really isn't rice at all and that it's in fact, orzo. Then they'll be like, "WOW! That's amazing!" After that, they'll climb to the roof tops and exclaim, "I LOVE ORZO! EVERYONE SHOULD FOLLOW KELSEY'S BLOG!"

...Or you could just let them go on and assume it's rice. Whatever works.

Ingredients:
1Tbl Extra Virgin Olive Oil
3/4C Orzo
1 1/2C Chicken Broth/Stock

1Tbl Butter
2Tbl Parmesan Cheese
Minced parsley

Directions:
Heat a small soup pot w/EVOO over medium-high heat. Add orzo and stir for 4 minutes until toasted. Add chicken stock. Bring to a boil and lower heat. Simmer for 10min. Remove from heat. Stir in butter, parmesan, and parsley.

Measure out the orzo and chicken stock.



Preheat the EVOO



Add the orzo.
Cook and stir continuously for 4-5 min.



It only takes 4-5 minutes, but is a process none-the-less, so be patient with it and continuously stir until toasty.





Add chicken stock.
Bring to a boil, reduce heat, and simmer for 10min.




Add parsely, butter, and parmesan.


Stir to combine.



Serve as a side dish.
