Wild Planet Tuna Casserole Entry

This is the recipe I created and wrote for the love of casseroles and for my love of Wild Planet Foods. They have offered an open spot to be deemed Wild Planet Food's Official Tuna Casserole. I hope this recipe fills that spot. The top 3 recipes (with the most votes by their peers) are the chosen 3 to go up against each other. From there, the Wild Planet Food team will take-over and will select the winning casserole after they perform taste tests. I accepted this challenge whole-heartedly from the get go. I will share a separate post to let you all examine its guts (my thoughts/way of creating the beast) Please, all of you. Say the force is with this one & vote a little vote for this beaut of a Tuna Casserole.

coat the surface of the casserole dish with:
1 Tablespoon Extra Virgin Olive Oil

1 Tablespoon
pregrated Parmesan Cheese

1 Tablespoon
dried bread crumbs . . .

what goes in the innards of this casserole:
 
eight to twelve oz. of Egg Noodles

A single five oz. can of Wild Planet 100% Wild Albacore Tuna either/or Wild Skipjack Light Tuna

 

1 Tablespoon Vegetable Oil + 1 Tablespoon unsalted Butter

                                                                                            a single dried bay leaf
 
 

2 Tablespoons unbleached AP Flour. (AP stands for All Purpose)
1 Cup cold Cream + 1 Cup cold Milk
1/3 Cup
pregrated Parmesan Cheese + 1/3 Cup shredded yourself  orangeSharpCheddarCheese
1/2 teaspoon Dijon mustard
2/3 Cup frozen peas
1
well-beaten egg
1/4c reserved cooking liquid

2/3 Cup yield of Asiago cheese finely grated against a box grater

Directions:
Dress your tuna - dump entire contents of Wild Planet Foods Tuna into a bowl. Flake the tuna. Season with 1/4teas sherry vinegar, 1 teas EVOO, and 1Tablespoon snipped chives
Prep your casserole dish & preheat your oven
In a 10x2in saute pan, heat the fat over medium heat
Add the mushroom, celery, and dried bay leaf
Cook uncovered for 5min.
season with 1/2teas coarse salt & 8 grinds pepper
Cover with a lid larger than the saute pan
turn the heat back to medium low
Cook covered for 5min.
Remove lid. Return the heat back to medium
Add the flour
Cook uncovered at least 2 1/2min
At this point, if you timed it right -- your noodles are halfway to being done
   Pour in the cold milk and cream

use a spatula to scrape as you wait for the sauce to come to a full bubble
Kill the heat
Add the cheese
Add the 2nd killer touch before adding the 1st to guild the lily
Add the peas
At this point, if you timed it right -- your noodles have just been drained
add to noodles
Fold in the tuna
Add the 1st killer touch that is followed by the 2nd
Pile and spread evenly into the casserole dish
Top with topping
 
I can't say for sure because my oven is broken, but I don't think I'm steering you in the wrong direction when I suggest to:
Bake @ 375'F for 30-35min. from room temperature
Bake for 45-50min from thawed/fridge state
 
Broil to desired toastiness.
 
 
Don't act like you're too good for a lil' casserole lovins.
