Pasta w/Parmesan, Pepper, and Peas

There are certain luxuries in life that can turn a chaotic day into calm. Relief is where it's at with this recipe. Just like a clean house, a freshly mowed lawn, a cold beer, or in my case... all of the above including a pasta salad waiting for me in the fridge - this dish is a total relief. Prepare it in advance & it most certainly will meet you when you want it. It could be eaten as a main or as a side dish. Whichever you choose, it's easily eaten.

Ingredients:
1 1/2C frozen Peas
1 can Tuna
1/2lb. Pasta (I used Macaroni)
2Tbl Parmesan
1tsp. EVOO
1tsp. ground Black Pepper

Juice from 1/2 a Lemon
Salt

Directions:
Cook pasta a minute less than boxed directions. Add peas. Drain tuna and add lemon juice. Drain pasta and peas. Rinse to cool. Add parmesan, pepper, tuna w/lemon, EVOO.


Bring a pot of water to boil.


Once boiling, generously season with salt and add pasta.



Give a stir.


Remember to lay a utensil across the top to prevent overflowage.


Boil a minute shy of al dente.


Add peas and cook for 1min.



Drain and rinse pasta. 


Add to a bowl.


Open the can of tuna and drain.


Add juice of 1/2 a lemon. Stir through.


Add a ridiculous amount of pepper (I counted 50 grinds), 2Tbl. parmesan, tuna w/lemon, and 1teas EVOO. 





Stir to combine and taste for seasonings. (I added 1/2tsp more salt)


Bowl up.


Cook's Notes:
I've been known to add a smidgen of Mayo to my bowl & stir through... ya know - on those no good, horrible, very bad days.
