In the world of charcoal, there are two different kinds. One being the standard, plain charcoal and the other "match light." To some, the difference is immeasurable and can be argued over for hours. The difference to me? One (plain) requires the addition of lighter fluid. The other (match light), ignites instantly.
Before everyone gets a little heated (pun!) on the subject, let me state my case as to why I prefer "match light"...
Standard charcoal requires lighter fluid (an extra expense), soaking time (boring), and additional babysitting to make sure the coals are properly lit. This results in a finicky process that could encourage an impatient being (like myself) to go ahead and add more lighter fluid in hopes of starting a fire. In turn, not all fumes of the lighter fluid will have a chance to burn off before the actual grilling starts. This runs the risk of transferring lighter fluid flavors to the grilled food itself. This is undesirable. *Another route to light standard charcoal is using a Charcoal Chimney Starter. They cost $10-$20 and can either be bought online, at Walmart, or hardware stores.
This is a sore subject with me, and I won't get into it. But let's just say a marital fight could have something to do with the fact that I'll never. EVER. buy one of these. |
It's true, "match light" charcoal can be lit instantly with a match/lighter. A person could argue this is a bit of a cop out and requires less skill of a griller. If that's your opinion, fine. I've used both and I'm a fan of the "match light." So there.
The steps to lighting standard or "match light" charcoal are basically the same.

Generally speaking, expect to use a 4lb. bag of charcoal each time you grill.
