Grilled Queso Fresco

This "grilled cheese" has no bread. That's right. No bread, no butter - just straight up cheese.

I saw this done a few years ago to Halloumi cheese and it blew my mind. It only took me 3 years to figure out I could do the same with Queso Fresco. This really is something that is less of a recipe and more of something that I simply think is (way) cool. Recipe or not, it's fun to make & to eat.

Ingredients:
Queso Fresco

Directions:
Preheat a nonstick skillet over medium-high heat. Slice cheese. Griddle. Flip. Griddle.


Slice Queso Fresco 



Preheat a nonstick skillet over med-high heat for 2-3min. (do not add oil)


Add slices of cheese to the hot (and dry) pan.


Cook 2min. The bottom of the cheese will start to sizzle as it cooks.



Flip cheese and cook for 1 more min.


Plate up.


Serve with tomatillo sauce.


Mmm-melty cheese.


Other serving suggestions: On a sandwich, with a fried egg, paired with sausage, on top chicken breast, or simply on its own.
